Eat Fit Protein Salad

Makes 4 servings

Lemon Garlic Dressing

Yields 2 cups

8 tablespoons lemon juice

1 tablespoon minced garlic

1 teaspoon pepper

Dash salt

1 cup olive oil

4 salmon filets

1 teaspoon black pepper

1/2 teaspoon salt

16ounces fresh spinach

16 cherry tomatoes

4 ounces goat cheese

2 ounces pecans

1 avocado 

4 ounces Lemon Garlic Dressing 

Lemon Garlic Dressing (see recipe above)

Add lemon juice and garlic into food processor and blend together. Season with salt and pepper. With food processor on, add olive oil.  Dice salmon into 1 1/2 inch cubes before tossing in Lemon Garlic Dressing before grilling.  While salmon is cooking, toss spinach in Lemon Garlic Dressing, salt, and pepper. Top salad with goat cheese, pecans, cherry tomato, and fan avocado. Once protein is finished cooking, place it around avocado. 

Per serving: 650 calories, 51 gram fat, 10 grams saturated fat, 78 milligrams cholesterol, 730 milligrams sodium, 13 grams carbohydrate, 8 grams dietary fiber, 2 grams sugar, 40 grams protein.
