Lettuce Cups with Shrimp Salad | Caffe! Caffe!

Makes 10-12 four-ounce servings 

2 ½ pounds shrimp, boiled and cleaned

1 ½ cups celery, diced 

1 tablespoon green onion, diced 

¼ teaspoon salt

Pinch of black pepper

Pinch of cayenne 

¾ cup mayonnaise

¾ cup balsamic vinegar

¾ cup extra virgin olive oil

In a large bowl, combine boiled shrimp, celery, green onion, salt, pepper, and cayenne pepper. Add mayonnaise and mix thoroughly.  

Serve prepared shrimp salad on hearts of romaine lettuce with one teaspoon each balsamic vinegar and extra virgin olive oil. 


Per serving: 180 calories, 11 grams fat, 1.5 grams saturated fat, 570 mg sodium, 3 grams carbohydrates, <1 gram fiber, 1.5 grams sugar, 24 grams protein.
