Summer Melon Salad | Ye Olde College Inn

Makes 4 Servings

This Summer Melon Salad is perfect for backyard cookouts, served as an appetizer, a side salad, or even as a family-style platter. 

½ cantaloupe, cut into 4 slices

2 cups watermelon, cut into 2-inch cubes

Pinch of sea salt

Pinch of freshly ground black pepper

8 ounces lump crabmeat

4 tablespoons goat cheese, crumbled

2 tablespoons balsamic vinegar

4 teaspoons extra virgin olive oil

On serving plates, divide cantaloupe slices and cubed watermelon. Sprinkle with salt and pepper. Top each serving with 2 ounces crabmeat and 1 tablespoon goat cheese. Drizzle with balsamic vinegar and oil. Serve chilled.
