Tommy’s Cuisine Seafood Cioppino
Tommy’s Cuisine Seafood Cioppino is a hearty comfort meal packed with protein.
Makes 8 servings
1 ½ pounds of fresh fish (e.g. snapper, tilapia) cubed
1 pound jumbo shrimp, peeled and deveined
¼ teaspoon sea salt
½ teaspoon fresh black pepper
3 tablespoons extra virgin olive oil
½ cup fennel bulb, chopped
½ cup shallots, chopped
6 garlic cloves, chopped
1 pound fresh mussels
1 cup seafood tomato stock (Tommy’s makes their own, but the home chef can use pre-made seafood stock blended with fresh tomatoes)
1 lemon, halved
Season fish pieces and shrimp on both sides with salt and pepper. In a hot sauté pan, add olive oil and allow to heat but not smoke. Add fennel and shallots and allow to sweat for 2 minutes, then add the chopped garlic and allow to toast.
Place the fish and shrimp into the pan being careful not to splash the oil. Let the seafood sear slightly on both sides, do not cook all the way through.
Add mussels and seafood tomato broth and bring to low simmer. Once simmering, turn heat to low and place a cover over the pan and allow mussels to steam for 1.5 minutes. Once the mussels have opened, taste the broth for seasoning. Add fresh herbs or a squeeze of lemon for additional flavor. Spoon into a large bowl to serve; serve hot.
