Superior Grill Baja Grilled Fish Tacos

Makes 1 serving 

7 oz. tilapia filet 

½ oz. Chef Paul Prudhomme’s Toasted Onion & Garlic No Salt/No Sugar Seasoning 

2 corn tortillas 

2 oz. shredded red cabbage 

1 wedge lemon 

1 oz. pico de gallo

2 oz. Superior yogurt sauce (recipe below)

Superior Yogurt Sauce (makes 1.5qt.):

2 tsp. horseradish 

6 oz. chopped red onion

2 tsp. Kosher salt

¼ cup chopped fresh garlic

½ cup creole mustard

½ cup white vinegar

4 cups light plain yogurt

Turn on gas fired barbecue grill. Cut the tilapia filet into 2 pieces and season with seasoning blend. Place tilapia onto grill. Cook fish 3 minutes on each side. Heat corn tortillas on a skillet at medium heat for 20 seconds on each side. Assemble fish on corn tortillas and serve with the following garnishments: shredded red cabbage, lemon wedge, pico de gallo, and Superior yogurt sauce.
